I think the best gluten free foods are those that mimic the foods we are used to, but without gluten. All of the recipes with 10 ingredients that I've never heard of are intimidating and freak me out.
This is one is not in the least bit intimidating, although it is kind of time consuming. The end product is worth it and it isn't difficult, it just takes a while.
I used the Pioneer Woman's Mac&Cheese recipe, but used a mixture of Tinkyada Brown Rice Shells and Quinoa Macaroni. I also used Bob's Red Mill All-Purpose GF flour instead of the white flour. This tastes just like regular mac&cheese. It was so good.
Because of the brown rice and quinoa, this is super filling. I had a banana and this for dinner, and I couldn't even finish the bowl. This is a perfect recipe to make and then have for leftovers. I was able to take it for a lunch a few times during the rest of the week.
