I've had my share of Pinterest fails and I'm sure you have too! But, lately I've had a lot of success with the recipes I've tried.
Tonight, we had Martha Stewart's Cilantro Lime Rice. This wasn't my favorite cilantro lime rice, but it was good enough. It was really easy to make and had tasty flavor. I did add more salt than it called for because it seemed kine of bland. We had this Grilled Honey Lime Chicken along side the rice, and I will definitely be making it again. So good!
I hate garbanzo beans. Hate hate hate. I bought Bob's Red Mill All Purpose Gluten Free flour. After bringing it home, I realized the first ingredient was garbanzo bean flour. Blech! I've used it in sauces many times and you can't tell the difference. I made hamburger buns, and those were gross. The other day, I had some zucchini I needed to use up and so I made Chocolate Zucchini Bread from Slice of Feist. I used this flour, along with some soy flour. The zucchini bread turned out delicious! It didn't taste a bit like garbanzo beans. I also made this same recipe with white flour for a work party and it was a hit!
To get my pizza fix without eating gluten-y crust, I tried these Zucchini Pizzas. When I broiled mine, I brushed them with olive oil, then sprinkled them with basil and parmesan cheese. These were really good. I ate them as snacks and as meals a few times. They hold up well in the fridge for a few days, so it was perfect to make a big batch and have them to eat throughout the week.
On other pinterest related notes, I want a dog really bad. I also want this cheesecake, this cake, and this t-shirt.
